Mike’s great-great-grandparents were dairy farmers who immigrated to the West Virginia highlands from Switzerland in the 1880s. Amy’s great-grandparents operated an award-winning family dairy just down the road from present-day Lost Creek Farm. From a recipe that calls only for milk, vinegar, and salt, fresh farmer’s cheese is a quick, unfermented delicacy that’s versatile and downright delicious. In our own recipe collections, there are heritage recipes for Lebanese pickled turnips, Italian pickled peppers, and Vietnamese-style pickled ramps or scallion heads. Follow the simple pickle recipes on the included card to make some of our favorites, and use the spice mix in your box to make a small batch of spicy dill pickles. During the rest of the year, when we want to achieve similar flavors from the forest, we’ll make a sweet syrup by boiling flakes of bark from shagbark hickory trees. The two-ounce bottle of shagbark hickory syrup in your box is just enough to make a jar of hickory bark dressing. Pair with fresh salad greens or a variety of wild greens. Some of our favorite foraged salad greens include dandelion, purple dead nettle, chickweed, and purslane. A grand feast was comprised of dozens of homemade entrees and sides, fresh breads, canned goods, and a host of desserts. But according to family legend, one dish stood above the rest: Aunt Floda’s Chicken and Dumplings. These vegetables are often combined to produce a bright, tangy, sweet and sour pickled relish commonly known as chow chow. Recipes for chow chow can change drastically from year to year, depending on what’s available. Apples are traditionally sliced and dried, often smoked, for long-term preservation and use in cooking throughout the year. Dried apples are used in hand-pies and apple stack cakes, as well as plenty of savory dishes. One of our favorite uses of dried apples is in a hearty skillet of braised autumn greens. Late-season kale, chard, collards, or turnip greens are the perfect match for apples. For some extra apple flavor, we like to add a splash of fresh-pressed apple cider. Use the West Virginia-ground cornmeal included in your box to make a pan of cornbread to share. Our version of cornbread isn’t sweet, but matches up well with sweet syrups and fruit spreads. Vinegar pie is a classic example of the ingenuity of rural home cooks. During a time when lemons were hard to come by or prohibitively expensive–or, most likely, both–resourceful home cooks tapped the alchemic powers of vinegar and nutmeg to mimic lemon flavors almost precisely. After harvesting the leaves sustainably, we dry them, grind them, and pair them with J.Q. Dickinson Salt for a flavorful addition to your favorite springtime dishes, from grilled meats to fresh garden salads. When those rigid flakes of bark are boiled, they release bold flavors that make for a delicious sweet syrup. Use shagbark hickory syrup in place of maple syrup on pancakes, mix into salad dressings, or make a variety of refreshing cocktails. Peel 5 or 6 medium-size beets, then cut into ¼-inch slices. In a small-to-medium sauce pot bring a pickle brine –– 1 cup of water, 1 cup of apple cider vinegar, 1 tablespoon of kosher salt, and 2 tablespoons of cane sugar –– to a boil, then add the beets. Cook for about 3 minutes. Pack beets into a sterile, quart-size glass jar. Add the spices, then top off with hot brine, filling to about an inch below the rim. We don’t blame her – they’re good! Our recipe is slightly different than the plain, but delicious, shortbreads Amy enjoyed with her grandparents decades ago. If you have a garden space, plant these seeds in the sun with room to grow vigorously. Harvest when dry and fully mature. Take care of them, and they will take care of you. If your harvest is successful, plant more, harvest more, and pass a few of the seeds on to others. But you don’t have to leave home to experience the perfect West Virginia dog (classic toppings include chili, slaw, mustard, and onions). Within the Mountain State, there’s some regional debate about slaw’s place on a dog, but wherever you’re chowing down, chili is a unanimous must-have. Simply open the seasoning mix in your box and follow the included instructions. We’re also likely to make old-fashioned peach butter to pair with toast, ice cream, biscuits, or the communion wafers we’ve included in this box. Though Mike didn’t attend church with his grandma, he snacked on plenty of these wafers, and we serve them frequently during our Farm & Forage Supper Club events. With butchering comes a variety of tasks, like curing bacon and ham, and making and preserving sausage. As a nod to the time-honored Harrison County traditions of Spanish and Italian sausage-making, we’ve included two spice mixes so you can make small-batch heritage sausage at home. The included spices will season 1 gallon of apple cider or wine (about 2 750 mL bottles). In a pot, simply add the sachet of spices, a small sliced orange and a few slices of lemon to your beverage of choice. Bring to a simmer and heat for 30 minutes. Apples are traditionally sliced and dried, often smoked, for long-term preservation and use in cooking throughout the year. Dried apples are used in hand-pies and apple stack cakes, as well as plenty of savory dishes. One of our favorite uses of dried apples is in a hearty skillet of braised autumn greens. Late-season kale, chard, collards, or turnip greens are the perfect match for apples. The garden and forest are resting before awakening again in spring, and after a busy summer and fall, we’re taking a little down time ourselves. But this season is still full of activity. We’re gearing up to tap our sugar maples for syrup and preparing for our early spring plantings. In the farmhouse kitchen, Amy’s baking delicious loaves of sourdough bread, we’re cooking with preserves from the harvest season, and thinking about the year ahead. We’re honored to share a piece of this special place with you in our Farm & Forage Provisions Box! In this season’s box, we’ve included items that mean a lot to us, our families and our community: hand-crafted snacks, pantry provisions, and artwork inspired by time-honored mountain traditions. Though Mike didn’t attend church with his grandma, he snacked on plenty of these wafers, and we serve them frequently during our Farm & Forage Supper Club events. We added a slightly spicy kick, thanks to ground, smoked chile peppers from our garden. Our own operation at Lost Creek Farm is incredibly small, yielding just enough syrup to use throughout the year in our on-farm dinner series. But we’re lucky to have good friends in the maple business! Trevor and Cheryl Swan of Hillsboro Maple Works in Pocahontas County produced the maple syrup we’ve included in this month’s box. We’re thrilled to partner with them, and we think you’ll love the syrup they produce! While we love to roast them and enjoy some seedy snacks, we also grind the seeds and incorporate them into a special seasoning blend with wild sumac. Our pumpkin seed and sumac seasoning blend is a wonderful addition to meat dishes like baked chicken or fish, but our favorite use is in a vinaigrette. We were baking plenty of loaves in our kitchen during that time, and we still are today. Amy’s dried some of her special sourdough starter, which can be easily rehydrated and used to get your own bread routine at home. It does take a little work and consistent attention at first. Since we’ve included maple syrup in our winter box, it’s hard not to suggest buckwheat pancakes. The recipe on the packaging is for a quick and simple risen pancake. If you’d like to get more adventurous, try fermenting some batter to make classic sour buckwheat cakes, a true West Virginia staple! For Amy, her family’s chocolate fudge recipe tops that list. It’s a true classic during the holidays and throughout the winter months. For the Farm & Forage Provisions Box, we’ve added a few personal twists to the Dawson family recipe. Wild chicory, whose roasted and ground roots have a lovely coffee-like flavor that pairs quite well with chocolate. Many decades ago, Amy’s ancestors made maple syrup here on the farm, hanging metal collection buckets from hand-carved wooden spiles.
